Raw Oat, Flax and Banana Cacao Crepes
This recipe has a very high fiber content. It contains no added fat, no nuts; but it offers a good dose of carbohydrates and is delicious.
2 cups whole oat groats, soaked 8 hours (can be "sprouted" 12-24 hours)
1 cup flaxseed, ground
6 bananas
2 tsp carob powder (or 1 tsp raw cacao)
raw cacao nibs (optional)
Rince the oat groats well after soaking (or sprouting). Put the oats and bananas in the food processor. Grind down to a pancake batter consistency. Pour into a bowl. Mix in the flax, carob pwder and cacao nibs, if using. Using 1/4 cup of the mixture, spread the batter into a circle on a dehydrator sheet. Put in the dehydrator for the night. Serve in the morning, with fruit and agave nectar. Delicioso!!!
