Raw Strawberry Shortcake
Inspiration: Café Gratitude
Ingredients:
Cake
3/4 cup chopped dates, packed
1 tablespoon lemon juice
1 tablespoon vanilla
1 pinch seasalt
1 cup almond pulp
1 cup soaked and dehydrated pecans, chopped
1/2 cup cashews, soaked
Raw Chocolate Sauce
Isn't it fascinating the amount of fruit children (young and not-so-much-so) will eat if just accompanied by a little chocolate sauce? Every good recipe collection should include at least one chocolate sauce recipe. For the hyperactive little ones, you can use carob in place of some or all of the raw cacao.

- 1/2 cup nut milk
- 1/4 cup raw liquid honey (or less)
- 1/3 cup date paste*
- 1 tbsp raw cacao powder (or carob)
- 2 tbsp raw cacao nibs (or more carob)
- 1 tbsp good quality vanilla
- one pinch of sea salt

Raw Baklava

For 2 pieces of Baklava you will need one sheet of phyllo2 ripe bananas
Juice of one orange
Dash of salt

Raw Donut Holes
Here’s a delicious raw vegan donut hole recipe. Naturally sweetened with whole dates, and flavored with vanilla. Plus, coconut, which is a great source of eletrolytes. I love making these with kids, they have a lot of fun rolling up the balls with their hands.
Inspiration: Ani Phyo
Ingredients:
1 cup almonds, dry
1/4 teaspoon sea salt
1 vanilla bean, scraped
1 cup dried pineapple, chop;
1 cup pitted dates
5 Tbsp dried shredded coconut
Preparation:
Mix all ingredients, except the coconut, in a food processor, until they are all well blended and sticky. Take out small quantities of the mix and roll them up into little balls. Roll the balls in the coconut shreds to make them less sticky. Serve.
