Raw Marinara Spaghetti
A nice bowl of spag. Now, who doesn't appreciate such comfort food? And the raw version I am here proposing is healthy, extremely low in fat and absolutely delicious! You will not want to eat any cooked spaghetti as long as there remains a zucchini in your vegetable garden!!!!This recipe is featured in the Menu for the preparatory week to Healthy Crusine's 10-Day Juice Feast. Ingredients:
1 zucchini, julienned
1 big tomato
2 dried tomatoes, soaked
1 green onion, chopped
2 tbsp fresh basil, chiffonnade
1 tsp dried oregano
pinch dried thyme
1 small garlic clove
Quick Rosemary & Oregano Raw Pasta
How does not like pasta? Zucchini (or summer squash, or courgette) easily fits the bill in countless raw foods recipe. And rightfully so! Not only is it fun (who doesn't feel like a kid while spiralizing a zucchini?), but also, it is nutritious. Click here to read all about how nutrition this little summer staple is. Yields 4 portions
Ingredients:
- 2 unpeeled spiralized zucchinis spiralisés (a yellow and a green one, for pretty colour combo)
- 2 tomatoes, cubed
- 1 avocado, cubed
- 1 small garlic clove, minced
- 1/2 tsp fresh rosemary, (crushed with a pinch of salt in a mortar or minced)
- 1 tsp fresh oregano, minced
- 1 tbsp cold-pressed olive oil
- juice of one lemon (or of two limes)
- pinch of sea salt (if not used to crushe the rosemary)
Preparation:
Put all the ingredients in a large bowl. Mix delicately (to not break the zucchini noodles).
Garnish with a few tbsp of hemp seeds (or seasoned sunflower seeds).

Basil and Black Olive Raw Zucchini Pasta
A delicately flavoured dish, all in subtle nuances of tastes.
Inspiration : Carmella
1 medium size zucchinis, julienned or spiralized
3 or 4 large basil leaves, chiffonnade
6 kalamata olives, chopped
1/4 red bell pepper, chopped
1/2 yellow squash, cubed
olive oil, to taste
shoyu, to taste
nutritional yeast, to taste
garlic powder, to taste
fresh or dried tarragon, to taste
Pinch cayenne
Toss noodles with other ingredients and serve immediately.
Optional: Serve topped with mushroom slices marinated in a little olive oil, tamari, garlic and tarragon.

I had the pleasure of an exceptional visit last week: my dear friend Carmella, of Raw Freedom Community, as well as Don and their merry bunch of traveling companions, Kylo (the dog) and DaPuss (the cat) came to my little corner of paradise. When my darling teenager suggested (in all innocence) that we offer our guests a nice (traditional cooked) pizza for lunch, my genius of a friend replied just as candidly (in French no less): "I'll prepare you an even better pizza, okay?". This started a series of meals where my men ate a lot more raw foods than they are used to (at least half of each meal being raw). So they ate a raw meal, accompanied by their (beloved cooked) meat and a baked potato. And with Carmella as personal chef, we were spoiled, let me tell ya! I wish I could have kept her! We had lots of fun together (even if the weather was miserable, the sun was shining just for us!)
