Caramelized Onions and Pesto Pizza

Carmella-Sheryl-DonI had the pleasure of an exceptional visit last week: my dear friend Carmella, of Raw Freedom Community, as well as Don and their merry bunch of traveling companions, Kylo (the dog) and DaPuss (the cat) came to my little corner of paradise. When my darling teenager suggested (in all innocence) that we offer our guests a nice (traditional cooked) pizza for lunch, my genius of a friend replied just as candidly (in French no less): "I'll prepare you an even better pizza, okay?". This started a series of meals where my men ate a lot more raw foods than they are used to (at least half of each meal being raw).  So they ate a raw meal, accompanied by their (beloved cooked) meat and a baked potato. And with Carmella as personal chef, we were spoiled, let me tell ya! I wish I could have kept her! We had lots of fun together (even if the weather was miserable, the sun was shining just for us!)

 



This whole experience reminded me of a pizza I had made. I will share the steps in the creation of this masterpiece of crulinary delight (yeah, cRulinary, as raw in french - cru - and the word culinary combined!), the Caramelized Onions and Pesto Pizza! Who could ever resist the enticing aroma of pizza? And even more so when it is raw and full of life! Ah! The joys of living foods... The recipe in itself is rather simple, once you have some staples.

The pesto: I had made a whole series of different ones (with walnuts, pecasn, purple basil, lime basil...). For this pizza in particular, I chose a Walnut Pesto with Purple Basil.

The tomato sauce: Okay, I cheated! On the picture, I put two lovely slices of fresh tomato instead of preparing tomato sauce.

The cheese: Raw Cashew Cheese... as if there was anything else!.

The garnish: you can dehydrate some onion rings covered in date paste to make a sort of caramelized onion.

Assemble all the elements, in the order of your choice (but the crust first, okay?)

Put everything in the D. A nice green side salad is good with this. I made mine with a simple garlic vinaigrette. This pizza was absolutely delicious!
